  1. Great work as always! I got a tip for the cornflour: take a an empty beer bottle and fill with a quarter of cornflour. Add cold water or white wine 3/4 to the top.

    When you want to thicken a sauce put your thump on the bottle and shake hard (like a quick tug) and squirt a little into the boiling stock while stirring with a whisk – keep doing that till you get the required consistency.

    No lumps and the girls are happy.
